Biga Recipe
This biga recipe is a preferment (dough starter) that can be used to make all your bread recipes. Adding biga to your recipes will give your bread a yeasty alcohol note that is desired when preparing Artisan style bread. It also has an influence on your dough strength improving the tolerance and stability of the dough during makeup, proofing, and baking. The Final result is a fantastic great tasting bread.
Ingredients
- 1000 grams Untreated White Flour
- 600 grams Water
- 5 grams Fresh Yeast
Instructions
- Add your flour, water and salt to mixing machine
- Mix on slow speed for 5 minutes followed by 3 minutes on high speed
- Refrigerate the dough for at least 8 hours before using it in your bread recipes.
