Ingredients & Directions


1/2 c Sugar
1/2 c Brown sugar, packed
1/3 c Honey
1/3 c Butter or margarine
1/3 c Shortening
1 1/2 ts Salt
2 Eggs
1 c Herman sourdough starter

1 1/2 c Applesauce
1 ts Vanilla
1 ts Rum extract
1 1/3 c All-purpose flour — white
1/2 c Whole wheat flour
3/4 ts Ground cinnamon
1/2 ts Ground allspice
1/2 ts Ground cloves
1/2 ts Baking soda
1 ts Baking powder
1 c Chopped walnuts — optional
1 c Raisins — optional

Cream together the sugars, honey, butter, shortening and salt until
light and fluffly. Add eggs, one at a time, mixing thoroughly. Add
Herman starter, applesauce, vanilla and rum flavoring. In another
bowl, combine flours, spices, baking soda and baking powder. Mix
thoroughly with a wire whisk. Fold into creamed mixture. Fold in
chopped walnuts and raisins if using them. Pour into a greased and
floured 10-inch tube pan or use a bundt pan. Bake at 350 degrees for
75-80 minutes or until a toothpick inserted near the center comes out
clean. Cool in pan a few minutes before removing.
