  • 2/3 c Butter ; melted
  • 3/4 c Lemon or lime juice
  • 2 ts Lemon Rind ; grated
  • 1 c Strawberries
  • 1 c Black currants
  • 1 c Raspberries
  • 1/2 c Red current jelly
  • 1 tb Cassis or other liqueur

 

INSTRUCTIONS

  1. Pastry:
  2. Use the recipe for speedy, pat in pastry and place in flan pan. 
  3. If necessary, brush with egg white before baking. Let cool before assembling ingredients.
  4. Filling:
  5. In mixing bowl, beat together eggs and sugar. Blend in
  6. butter, lemon juice and rind.
  7. Pour into pie shell and bake in 350 degree
  8. oven for 20 to 25 minutes or until filling is set.
  9. Topping and glaze:
  10. Also black coffee can be used instead of cassis.
  11. Pile strawberries along the sides and the center of pie.
  12. Surround with currants or blueberries and finish with raspberries or black berries.
  13. Heat jelly until melted; stir in cassis. Brush over fruit.
