2 ea Eggs Softened
3/4 c Honey 1/2 c Currants
3/4 c Quick-cooking oats 1/2 c Walnuts — chopped
3/4 c Flaked coconut 1 ea Unbaked pie pastry 9 inches
3/4 c Packed brown sugar Whipped cream, optional
1/2 c Butter or margarine —

In a mixing bowl, beat eggs. Add honey, oats, coconut, brown sugar,
butter, currants and walnuts; mix well. Pour into pie shell. Bake at
350 deg. for 40-45 minutes or until browned and a knife inserted near
the center comes out clean. Cool. Serve with a dollop of whipped
cream if desired. Yield: 8 servings
