This Scotch recipe is probably one of the easiest types of shortbread to make. To make these Scotch biscuits we will be using brown sugar and a combination of butter and lard instead of the traditional Scottish butter shortbread which uses only butter and powdered or fine sugar. If you do want to use the lard you can substitute it with shortening or butter at one to one ratio. These cookies also have a hint of nutmeg which gives with is surprisingly delicious.

Easy Homemade Scotch Shortbread

 

 

Ingredients For Scotch Shortbread

  • 3/4 Brown sugar
  • 3 cups All Purpose Flour
  • 1/2 cup Lard or Shortening
  • 1/2 cup Salted Butter
  • 1/8 teaspoon Nutmeg

How To Make Scotch Shortbread?

  1. Preheat oven to 330°F or (165°C), and line a baking sheet with parchment paper.
  2. Add the flour and nutmeg into a bowl and whisk together. Set aside.
  3. Cream together the butter, lard, and brown sugar until smooth. Then add the flour mixture and mix just until the cookie dough comes together.
  4. Transfer onto a floured surface and roll out to about 1/4 inch in thickness. If you want thicker shortbread cookies then roll them out to 1/2 inch in thickness.
  5. Using the desired cookie cutter, cut out pieces and place them onto a lined baking pan. separate them about 1 1/2 inches apart.
  6. Bake in the preheated oven for 15-20 minutes or until golden in color.
  7. Remove from the oven and allow the shortbread to cool on the baking pan for 10 minutes, then transfer to the cooling rack.
  8. Enjoy!
