Ingredients For Soft Sugar-Free Cookies

  • 1 1/4 cups water
  • 1/3 cup shortening
  • 1 cup raisins
  • 2 teaspoons ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 2 eggs
  • 1/2 teaspoon salt
  • 1 teaspoon baking soda
  • 2 teaspoons liquid artificial sweetener
  • 2 tablespoons water
  • 1 teaspoon baking powder
  • 2 cups all-purpose flour

Instructions For Soft Sugar Free Cookies

  1. Preheat oven to 350 degrees F (175 degrees C). Grease a cookie sheet.
  2. In a small saucepan, bring the 11/4 cup of water, raisins, shortening, cinnamon, and nutmeg to a boil.
  3. Remove from heat, beat in eggs, one at a time.
  4. Dissolve salt, soda, and liquid sweetener into the remaining 2 tablespoons of water; add alternately to the egg mixture, with the flour and baking powder.
  5. Drop cookies by teaspoonfuls onto the prepared cookie sheet.
  6. Bake the sugar-free cookies for 8 to 10 minutes in the preheated oven.
  7. Cool on wire racks.
