to prepare the filling :
add all the ingredients into a bowl and mix them together on medium until it comes to a boil then reduce the heat to low continuously mixing until its thickness. will take about 10 minutes.
Transfer the curd filling to another bowl and let it cool down for about an hour at room temperature. Cover the bowl with plastic wrap, pressing down until it reaches the surface of the curd. This will prevent your filling from skinning
place in the refrigerator for about 2 hours
For the doughnut batter:
Preheat your oven to 350°F (180°C
Grease your doughnut mold with butter or pan release
In a bowl add the almond flour, oat flour, rice flour, granulated sugar, baking powder and salt and blend all together
In a separate bowl, add the eggs and whisk followed by the milk , oil, natural vanilla extract, apple jam and lemon zest and mix all together until well incorporated
Add the liquid mixture to the dry ingredients and mix well until combined
deposit the batter into the doughnut mold reaching just under the top rim of the doughnut mold
Bake for 20 minutes then insert a toothpick to ensure doughnuts are baked.
toothpick should be dry.
Once the donuts are baked remove from mold a cool on wired rack
to make the Glaze:
Mix the ingredients for the glaze together until nice a smooth.
Gently slice each individual doughnut with a knife and pipe or spread the lemon filling followed by a drizzle with the glaze
