Triple Chocolate Zucchini Cake Donut Recipe ( Baked not Fried )

Here is a simple and easy oven baked Triple Chocolate Zucchini Cake Donut Recipe from BakerRecipes.com. These donuts are a healthy choice baked not fried. To make these cake donuts you will need a special donut baking pan that can be bought anywhere like Walmart, Target etc.

Ingredients
  

  • 2 cups or ( 220 grams / 8 oz ) Cake Flour
  • 3/4 cup or ( 150 grams / 5.29oz ) granulated sugar
  • 1/2 cup or ( 50 grams / 3.5oz) cocoa powder
  • 2 tsp or ( 10 grams / 0.45 oz ) baking powder
  • 1 tsp or ( 6 grams ) Salt
  • 1 cup or ( 150 grams / 5.5 oz) zucchini (shredded and dried)
  • 1 cup or ( 175 grams / 6.2 oz) White chocolate chips
  • 3/4 cup or ( 180 grams / 6.3 oz ) buttermilk fresh
  • 2 or 100 grams / 3.5oz) whole eggs
  • 2 tbsp ( 28 gram / 1 oz ) melted butter unsalted
  • 1/2 cup White chocolate chips For Drizzle

Instructions
 

Cake Donuts

  • Start by Preheating your oven to 425 F.
  • Shred the fresh zucchini onto a cheese cloth or strainer. Squeeze out zucchini juice, let shredded zucchini stand out for 15-20 minutes.
  • In a bowl sift the Cake Flour and baking powder 2-3 times. In a mixing bowl, combine the sifted flour and baking powder, sugar, salt and cocoa. Mix in the zucchini and chocolate chips until well coated by flour mixture. Add the buttermilk, eggs and butter. Mix just until combined.
  • Spray the donut pan with vegetable oil or coat withbutter. Deposit donut mixture into donut pan, filling ¾ full. Bake for 9-10 minutes, when ready the tops will spring back when gently pressed. Cool in pan for 10 minutes then transfer to rack and cool completely.

Drizzle

  • For the drizzle you can melt the white chocolate chips in a microwave-using a safe bowl in 15 second increments, stirring in between. Using a piping bag or small spoon drizzle over the cooled cake donuts. Enjoy!
