- 500 grams of all purpose flour
- 25 grams fresh yeast
- 10 grams salt
- 50 grams sugar
- 220 grams milk
- 50 grams eggs
- 75 grams unsalted butter
Add all the ingredients into a mixing bowl and mix on low speed for 4 minutes. Increase the speed to medium-high and continue to mix for about 6 minutes or until the dough is fully developed. The dough should be smooth with a nice glossy sheen.
Transfer the milk dough into a greased or flour bowl and cover with a plastic sheet or cloth. Allow the dough to ferment for 60 minutes.
Once the dough has fermented, turn it over onto a floured working surface.
Divide the milk dough into 12 equal pieces and slightly round each one.
To shape the milk buns, roll each piece with the palm of your hand into an oval shape about 6 inches in length.
Line a baking sheet with parchment paper and place the shaped dough pieces onto it separating them a few inches apart. If your baking tray is small use two.
Cover the baking tray with a sheet of plastic and allow to proof for 60 minutes.
Once the milk buns are fully proofed, beat one egg and brush the tops of each bun.
Bake in a preheated oven at 190°C (375°F) for 16-18 minutes or until golden brown.
Remove the baking tray from the oven and allow the milk buns to cool on a wire rack.
