Ingredients
  

  • 2 cups old-fashioned or quick-cooking rolled oats uncooked
  • 2 cups sifted all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup butter or margarine
  • 1 cup firmly packed brown sugar
  • 1/2 cup granulated sugar
  • 2 eggs well beaten
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1 cup coarsely shredded carrots
  • 3/4 cup apples diced small
  • 3/4 cup chopped walnuts optional

Instructions
 

  • Preheat the oven to 350 degree F, and line 2 baking sheets with parchment paper.
  • In a large mixing bowl with an electric mixer, beat butter, brown sugar, and granulated sugar until well mixed.
  • Add the eggs and mix well.
  • Sift together the flour, salt, cinnamon, nutmeg, baking powder, and baking soda, into a bowl then add to the butter mixture and mix well.
  • Add in the oats, apple, and walnuts and mix until combined.
  • Drop the carrot cookie dough by tablespoonsful onto lined baking sheets and slightly flatten the tops.
  • Place the baking tray into the oven and bake for 20- 25 or until light golden brown.
  • Remove the baking tray from the oven and transfer the carrot cookies to a cooling wire rack.
