Ube Cheese Pandesal with Mozzarella Cheese

Ingredients
  

  • 2 cups all-purpose flour
  • 1/4 cup warm milk
  • 1/2 teaspoon salt
  • 1 egg beaten
  • 2 1/2 tablespoons sugar
  • 1 teaspoon instant yeast
  • 1/4 cup ube halaya purple yam jam
  • 1/3 cup mozzarella grated
  • 2 tablespoons melted butter
  • 1/2 cup breadcrumbs

Instructions
 

  • In a large mixing bowl, combine the flour, sugar, and instant yeast. Mix well.
  • In a separate bowl, combine the ube halaya, grated mozzarella cheese, egg, salt, melted butter, and warm milk, and mix together.
  • Gradually add the wet ingredients to the dry ingredients and mix until a dough forms.
  • Transfer the dough onto a floured work surface and knead the dough for about 10 minutes, or until it becomes smooth and elastic.
  • Place the ube pandesal dough into a greased bowl, and cover it with a plastic or damp cloth. Let the dough rise in a warm place for about 45 minutes or until it doubles in size.
  • Punch down the dough and then turn it over onto your working surface. Portion the dough into 12 equal parts and round each piece into a ball shape. Add the breadcrumbs to a bowl and coat each roll with it.
  • Place the rolls onto a parchment paper lined baking sheet spacing them apart about 2 inches.
  • Cover the ube pandesal and let it rise again for another 45-60 minutes or until doubled in size.
  • Preheat the oven to 350°F (175°C).
  • Bake the pandesal rolls for 20-25 minutes or until they turn golden brown.
