Biga Recipe

This biga recipe is a preferment (dough starter) that can be used to make all your bread recipes. Adding biga to your recipes will give your breads a yeasty alcohol note that is desired when preparing Artisan style breads. It also has an influence on your dough strength improving the tolerance and stability of the dough during make up, proofing and baking. Final result is a fanastic great tasting bread.

  • 1000 grams untreated flour
  • 600 grams Water
  • 5 grams Fresh Yeast


  • Add your flour, water and salt to mixing machine
  • Mix on slow speed for 5 minutes followed by 3 minutes on high speed
