Biga Dough Recipe
Biga Recipe. A Biga is a pre ferment that is prepared prior to mixing a dough. Here is a recipe for a standard Biga also refered to as dough starter, old dough, mother dough, pate fermentee.
- 1000 grams all purpose flour
- 58 grams Water
- 2 grams Fresh Yeast
Mixing Process:
Add all ingredients into mixing bowl and mix 5 minutes on low and 3 minutes on high speed.
Final dough temperature should be between 18-20 Celsius
Place dough covered into cooler at 10 Celsius and retard for 10-12 hours prior to usage.
