Hong Kong Bubble Waffle Recipe (Gai Daan Jai)

These bubble waffles also known as gai daan jai are definitlety the most unique waffles I've ever made. Eggy and sweet these bubbly waffle cakes are simply delicious.

Ingredients
  

  • 120 grams All Purpose Flour 1cup
  • 150 grams eggs 3 large eggs
  • 60 grams butter 2tablespoons melted
  • 30 grams cornstarch 2 tablespoons
  • 100 grams sugar 1/2 cup
  • 4 grams baking powder 1 teaspoon
  • 60 grams milk 1/4 cup
  • 1/2 teaspoon vanilla extract
  • pinch of salt

Instructions
 

  • Add the flour, salt and baking powder into a bowl and whisk together, Set aside.
  • Add the eggs into another bowl and beat using a hand mixer.
  • Slowly add the sugar while beating the eggs.
  • Add in the milk and vanilla extract to the egg mixture and continue to beat.
  • Fold in the flour mixture using a spatula, then add the melted butter and continue to fold in using the spatula until well combined.
  • Preheat your bubble waffle plate.
  • Spray with pan release and add 70% of the batter about into the wells of the waffle plate.
  • Cook for about 2-3 minutes on each side or until the bubble waffle is light golden brown.
  • If you want to make an ice cone with the bubble waffle, then curl it into a cone once its cooked and set aside otherwise enjoy your bubble waffle as is or sprinkled with icing sugar.
