Finnish Oven Baked Pancake (Pannukakku)

No need for a griddle or stovetop skillet to make these pancakes. Simply melt some butter in the oven, combine all the ingredients and pop the Pannukaku Finnish pancake batter in the oven and bake.

Ingredients
  

  • 1 cup all purpose flour 120 grams
  • 2 cups milk 240 grams
  • 3/4 cup sugar 150 grams
  • 5 tablespoons butter 75 grams
  • 4 large eggs 200 grams
  • 1 teaspoon vanilla extract 4 grams

Instructions
 

  • Preheat oven to 175°C (350°F)
  • Add the butter into a 9x13 pan and place into the oven until it melts. Remove spread the melted butter throughout the pan and set aside.
  • In the Meantime, add the rest of the ingredients into a bowl and mix together using a whisk or hand mixer, mix until batter batter is frothy.
  • Pour the Pannukakku batter into baking pan with melted butter.
  • Place into oven and bake for 35-40 minutes.
  • Remove from oven and serve.
