Ingredients
  

  • 8 ripe apricots
  • 50 grams sugar
  • 40 grams shelled raw pistachios
  • 40 grams blanched almonds
  • 60 grams of unsalted butter room temperature
  • 1 vanilla pod seed removed and reserved

Instructions
 

  • Preheat the oven to 190°C (375°F) and grease a gratin dish with butter. Set aside.
  • Rinse and wash the apricots, then pat them dry.
  • Cut each apricot in half and remove the pit in the center.
  • Place the almonds and pistachios into a food processor and blitz until coarse powder is achieved.
  • Pour this almond mixture into a bowl and add the butter, vanilla, and sugar, and mix everything together until creamy consistency.
  • Fill each of the apricot halves with this cream placing them side by side in the gratin dish.
  • Place into the preheated oven and bake for about 20 minutes.
  • remove from the oven and slightly cool before serving.
