- 8 ripe apricots
- 50 grams sugar
- 40 grams shelled raw pistachios
- 40 grams blanched almonds
- 60 grams of unsalted butter room temperature
- 1 vanilla pod seed removed and reserved
Preheat the oven to 190°C (375°F) and grease a gratin dish with butter. Set aside.
Rinse and wash the apricots, then pat them dry.
Cut each apricot in half and remove the pit in the center.
Place the almonds and pistachios into a food processor and blitz until coarse powder is achieved.
Pour this almond mixture into a bowl and add the butter, vanilla, and sugar, and mix everything together until creamy consistency.
Fill each of the apricot halves with this cream placing them side by side in the gratin dish.
Place into the preheated oven and bake for about 20 minutes.
