Cherry Clafoutis French Recipe

- 550 grams black or red cherries fresh, frozen, or canned
- 80 grams unsalted butter
- 8 large eggs
- 60 grams heavy cream or whipping cream
- 200 grams of sugar
Remove the stems and pits from the cherries and set them aside.
Preheat the oven to 190°C (375°F).
In a bowl beat, add the eggs, vanilla, and 150 grams and beat well.
Add the rum and stir. Fill the cake pan with the batter, then add the cherries to the top.
Bake for 25-30 minutes or until golden brown.
Remove the clafoutis and put the oven set on the broiler.
Sprinkle the top of the cherry clafoutis with the leftover sugar remaining sugar and place back into the oven for a few minutes just until the sugar carmelizes. This step is optional and you can skip it.
Remove from the oven and allow to cool, then dust with some icing sugar before serving.
