Cherry Clafoutis French Recipe

Ingredients
  

  • 550 grams black or red cherries fresh, frozen, or canned
  • 80 grams unsalted butter
  • 8 large eggs
  • 60 grams heavy cream or whipping cream
  • 200 grams of sugar

Instructions
 

  • Remove the stems and pits from the cherries and set them aside.
  • Preheat the oven to 190°C (375°F).
  • In a bowl beat, add the eggs, vanilla, and 150 grams and beat well.
  • Add the rum and stir. Fill the cake pan with the batter, then add the cherries to the top.
  • Bake for 25-30 minutes or until golden brown.
  • Remove the clafoutis and put the oven set on the broiler.
  • Sprinkle the top of the cherry clafoutis with the leftover sugar remaining sugar and place back into the oven for a few minutes just until the sugar carmelizes. This step is optional and you can skip it.
  • Remove from the oven and allow to cool, then dust with some icing sugar before serving.
