No yeast, No kneading, this easy avocado quick bread recipe with baking powder is super easy and quick to prepare and it tastes delicious. Enjoy it plain or with a sweet sugar glaze topped with fresh strawberries.

Ingredients
  

AVOCADO QUICK BREAD

  • 2 cups flour
  • 1/2 tsp. baking soda
  • 3/4 tsp. baking powder
  • 1/4 tsp. salt
  • 3/4 cup sugar
  • 1 medium ripe, avocado
  • 2 eggs
  • 1/2 cup buttermilk
  • 1 cup strawberries for garnishing

SUGAR GLAZE

  • 1 cup powdered sugar
  • 1 to 2 tablespoons milk
  • 1/2 teaspoon vanilla extract

Instructions
 

  • In a large bowl combine flour, baking soda, baking powder, salt, and sugar.
  • In a separate bowl, mash avocado; add eggs and buttermilk and mix well.
  • Add wet ingredients to dry ingredients and mix only until flour is moistened. Do not over-mix.
  • Pour batter into a greased 9×5 loaf pan and bake at 350 degrees F. for 50 – 60 minutes or until the cake tester comes out clean.
  • Let cool in pan for 5 minutes, then turn onto the rack to cool completely.
  • Prepare the sugar glaze: In a medium-sized bowl, sift the powdered sugar to remove any lumps.
  • Add the vanilla extract and one tablespoon of milk and mix them together using a whisk. If the sugar glaze is too thick, add the remaining milk and whisk again until the mixture is smooth and has a pouring consistency.
  • Once the cake is cooled, pour the glaze over the top and garnish with some fresh strawberries.
