- 1/2 tsp. baking soda
- 3/4 tsp. baking powder
- 1/4 tsp. salt
- 3/4 cup sugar
- 1 medium, ripe, avocado
- 2 eggs
- 1/2 cup buttermilk
- 1 cup strawberries, for garnishing
Ingredients For The Sugar Glaze
- 1 cup powdered sugar
- 1 to 2 tablespoons milk
- 1/2 teaspoon vanilla extract
How To Make Avocado Quick Bread?
- In a large bowl combine flour, baking soda, baking powder, salt, and sugar.
- In a separate bowl, mash avocado; add eggs and buttermilk and mix well.
- Add wet ingredients to dry ingredients and mix only until flour is moistened. Do not over-mix.
- Pour batter into a greased 9×5 loaf pan and bake at 350 degrees F. for 50 – 60 minutes or until the cake tester comes out clean.
- Let cool in pan for 5 minutes, then turn onto the rack to cool completely.
- Prepare the sugar glaze: In a medium-sized bowl, sift the powdered sugar to remove any lumps.
- Add the vanilla extract and one tablespoon of milk and mix them together using a whisk. If the sugar glaze is too thick, add the remaining milk and whisk again until the mixture is smooth and has a pouring consistency.
- Once the cake is cooled, pour the glaze over the top and garnish with some fresh strawberries.
