This easy Anzac cookies recipe is made with simple ingredients, the steps are slightly different than conventional cookies, the butter is cooked with golden syrup for a few minutes and then added to the dry ingredients.

Anzac biscuits date back to the early 1900s, Australian and New Zealand moms and wives would prepare these treats and mail them to their sons and husbands during World War I. It is fair to say that these Aussie cookies are very much a part of New Zealand’s history and culture, we could call these cookies Traditional New Zealand Anaz Biscuits.

Anzac Biscuits

Ingredients For Traditional Anzac Biscuits

  • 1 cup all purpose flour (120 grams)
  • 1 cup rolled oats (90 grams)
  • 1/4 teaspoon salt (1.2 grams)
  • 1/2 teaspoon baking soda (2.5 grams)
  • 1 cup graulated sugar (200 grams)
  • 1 cup desiccated coconut (90 grams)
  • 2 tablespoons golden syrup or honey (40 grams)
  • 1/2 cup unsalted butter (125 grams)
  • 2 tablespoons boiling water (30 grams)

How to Make Traditional Anzac Biscuits?

  1. Preheat oven to 175°C (350°F), and line 2 baking pans with parchment paper.
  2. In a large bowl combine the oats, flour, salt, granulated sugar, and coconut and stir together.
  3. Over medium-low heat combine the butter and golden syrup or honey and cook just until the butter melts stirring as needed, about 3 minutes. Turn off the heat and allow it to cool for 5 minutes.
  4. Mix the boiling water with the baking soda in a small bowl.
  5. Add both liquid mixtures to the flour mixture and mix using a spatula until the cookie batter comes together. Do not overmix.
  6. Drop or roll 2 tablespoonfuls of cookie batter into balls and place onto lined baking trays, leaving about 1-inch space between them.
  7. Bake in preheated oven for 15-16 minutes, then remove from the oven and allow the cookies to cool on the baking tray.
  8. Serve and Enjoy!
