- 1 1/2 cups all purpose flour
- 1 1/4 cups sugar
- 3/4 cup brown sugar
- 3 cups quick oats
- 1 cup unsalted butter room temperature
- 3/4 teaspoon baking soda
- 2 large eggs beaten
- 1 1/2 teaspoon vanilla extract
- 3/4 teaspoon cinnamon
- 1/4 teaspoon allspice
- 1/4 teaspoon ginger powder
- 1/4 cup unsweetened coconut flakes
- 1/2 cup raisins
- 1/2 cup candied fruit optional
In a large bowl sift together flour, cinnamon, ginger powder, allspice, baking soda, and salt and give a stir. Ser aside.
Beat the butter, sugar, and brown sugar in a large bowl until light and fluffy.
Add the eggs and vanilla extract and beat to combine, then slowly add the flour mixture beating until the mixture is combined.
Fold in the quick oats, raisins, and coconut until well incorporated into the cookie dough.
Chill the dough for 30 minutes in the refrigerator or until firm.
Roll the cookie dough on a lightly floured working surface to about 1 1/2 inches in diameter, then cut the dough into 1/4 inches discs.
Place them onto a lined baking sheet separating them about 2 inches apart.
Bake in a preheated oven set to 350°F or 175°C for 10-12 minutes or until golden brown in color.
Remove cookies from the oven and carefully transfer them to a cooling rack.
