Ingredients
  

  • 1 1/2 cups all purpose flour
  • 1 1/4 cups sugar
  • 3/4 cup brown sugar
  • 3 cups quick oats
  • 1 cup unsalted butter room temperature
  • 3/4 teaspoon baking soda
  • 2 large eggs beaten
  • 1 1/2 teaspoon vanilla extract
  • 3/4 teaspoon cinnamon
  • 1/4 teaspoon allspice
  • 1/4 teaspoon ginger powder
  • 1/4 cup unsweetened coconut flakes
  • 1/2 cup raisins
  • 1/2 cup candied fruit optional

Instructions
 

  • In a large bowl sift together flour, cinnamon, ginger powder, allspice, baking soda, and salt and give a stir. Ser aside.
  • Beat the butter, sugar, and brown sugar in a large bowl until light and fluffy.
  • Add the eggs and vanilla extract and beat to combine, then slowly add the flour mixture beating until the mixture is combined.
  • Fold in the quick oats, raisins, and coconut until well incorporated into the cookie dough.
  • Chill the dough for 30 minutes in the refrigerator or until firm.
  • Roll the cookie dough on a lightly floured working surface to about 1 1/2 inches in diameter, then cut the dough into 1/4 inches discs.
  • Place them onto a lined baking sheet separating them about 2 inches apart.
  • Bake in a preheated oven set to 350°F or 175°C for 10-12 minutes or until golden brown in color.
  • Remove cookies from the oven and carefully transfer them to a cooling rack.
