Ingredients
  

  • 3 cups flour 360 grams
  • 1 cup milk 240 grams, lukewarm
  • 2 tablespoons water 30 grams
  • 1 tablespoon butter or oil 15 grams
  • 1 teaspoon salt 5 grams
  • 2 teaspoons dry active yeast 6 grams
  • 2 teaspoon sugar 10 grams
  • 1/4 teaspoon baking soda 1 gram
  • 1 tablespoon 10 grams, for topping (optional)

Instructions
 

  • Place all the ingredients into a bowl of a stand mixer and mix on slow speed for 6 minutes, then increase the mixer speed and continue to mix for additional 6 minutes or until the dough is fully developed.
  • This dough is softer than regular dough, it’s perfectly fine.
  • Grease a bowl big enough to allow the dough to double in size.
  • Place the dough in the greased bowl and allow it to rest for 45 minutes.
  • Transfer the dough onto a floured working surface and shape it into an oval and roll it onto cornmeal, then place it into a 5 x 8-inch loaf pan.
  • Cover and allow it to proof double in size, about 40-45 minutes.
  • Bake at 400 degrees for 25-30 minutes.
  • Remove the English muffin bread from the oven, then release it from the baking pan.
  • Cool the loaf on a wire rack.
  • Slice and serve.
