  • 1 3/4 cups whole wheat flour
  • 1/2 cup white flour
  • 1/4 cup dark rye flour
  • 1/2 cup molasses
  • 2 teaspoons baking soda
  • 1 teaspoon salt
  • 2 cups buttermilk
  • 1 cup raisins (optional)

  1. Combine all ingredients and mix well. The dough will not be fully mixed.
  2. Spoon into two well-greased, 1-pound size coffee cans or two 8X4 loaf pans.
  3. Each should be half full, cover the top with a buttered aluminum foil cover tightened to the edges of the pan or can and tied with string or twine.
  4. Oven-Baked Boston Bread: Let the filled coffee can stand for 30 minutes, then bake in a 350-degree oven for 45-50 minutes.
  5. Steamed Boston Brown Bread: Place a small wire rack at the bottom of the poor or kettle. Place the filled cans or baking pan into the pot, then fill with boiling water until it reaches 2/3 thirds of the sides of the pan or can.
  6. On high heat bring the water in the pot to a boil, then reduce the heat and cover it with a lid.
