- Ingredients
- 12 tbsp unsalted butter, softened
- 11⁄2 cups all-purpose flour, plus extra for dusting
- ¾ cup sugar
- 3 large eggs
- 1½ tsp baking powder
- ½ tsp salt
- 1/2 tsp of natural lemon extract
- Method
- Preheat your oven to 350°F (180°C).
- Grease the cake or loaf pan with butter and dust with some flour.
- Place the butter and sugar in a mixing bowl with paddle attachment and cream them both together until creamy and fluffy, about 3 minutes.
- Add in the eggs one at a time and continue mixing until very well combined
- Slowly sift in the flour with the baking powder, and salt.
- Add in the lemon extract and continue mixing until batter is smooth and shiny
- deposit the batter into the cake or loaf pan about 3/4 full.
- Bake for 45-50 minutes or until skewer comes out dry.
- Once cake is baked, let cool in cake pan for 2-3 minutes then remove and place on wire rack for cooling.
