- Once sugar is caramelized, it will have a light brown color. Remove the pot or ladle from the heat and add a pinch of baking soda and stir until the color becomes light.

If you want to make Dalgona candy without baking you can just omit the baking powder from the recipe, but keep in mind that the candy will be darker and a bit more denser and harder. The baking soda helps to give the Dalgona a honeycomb texture that that is light and airy and as mentioned above, it also changes the color to a light beige from brown.

- 1 pinch of baking soda
How To Make Squid Game Dalgona Candy?
- Place the sugar in a non-stick metal ladle and heat on medium low setting.
- Stir constantly with a wooden spoon until the sugar is completely melted.
- Remove from heat and add a pinch of baking soda and mix well. The caramel will expand and lighten in color to a golden beige.
- It will expand and change from light brown to creamy golden beige.
- Sprinkle some sugar onto the parchment paper then pour the hot foamy caramel onto the parchment paper, then add the lollipop stick into the lower part directly in the middle about an inch from the rim.
