  3. Melt the sugar on medium low heat, this will allow the sugar to caramelize perfectly without burning it.
  4. Once sugar is caramelized, it will have a light brown color. Remove the pot or ladle from the heat and add a pinch of baking soda and stir until the color becomes light.
  5. Use only a pinch of baking powder, too much of it will make the candy bitter.

  1. Place the sugar in a non-stick metal ladle and heat on medium low setting.
