Ingredients & Directions


1 2/3 c Unbleached flour; -small pieces
1 1/3 c Yellow cornmeal; 1/3 c Blue cheese; crumbled
1 tb Baking powder; 2 oz Baked ham; chopped
1 tb Sugar; 1 tb Green onion; chopped
1 pn Cayenne pepper; (optional) 2/3 c Low-fat milk;
3 tb Unsalted butter; cut into

Preheat oven to 425 degrees. Prepare baking sheet with nonstick
vegetable cooking spray. In a large mixing bowl, stir together the
flour, cornmeal, baking powder, sugar and cayenne pepper. Add
butter and the blue cheese, cutting them into the flour until the
mixture resembles coarse crumbs. Only little pieces of butter and
cheese should be visible. Stir in ham and green onions. Make a well
in dry ingredients. Add the milk. Stir until the mixture forms a
firm, damp mass. Knead dough once or twice with floured hands, then
roll or pat into a thickness of 3/4″ on a floured surface. Using a 2″
cutter, cut into biscuits and place them on the prepared sheet. Or
cut the biscuits in 9″ or 12″ squares and place them on a Bake at 425
degrees oven for 12 – 14 minutes, until browned or crusty. Transfer
to a cloth-lined basket; serve hot.
