Ingredients & Directions


3 c Sifted flour 2 c Sugar
1 ts Baking powder 1 c Pecans, finely chopped
1 ts Salt Caramel Icing:
1 ts Baking soda 2 1/2 c Sugar
1 ts Cinnamon 3/4 c Milk
3/4 c Oil 1 Egg
4 c Apples, finely chopped 1/2 c Sugar
(about 6) 1/2 Stick butter
1 ts Vanilla 1 ts Vanilla
2 Eggs

Preheat oven to 350 degrees. In a lg mixing bowl, sift flour, baking
powder, soda, salt, & cinnamon. Add oil, apples & vanilla. Beat at
md speed for 2 min. until well blended. In another bowl, beat eggs
until light yellow in color. Gradually add sugar & continue beating
until light & fluffy. Fold egg mixture into the apple mixture,
blending thoroughly. Stir in nuts. Pour into lightly greased 10″
tube pan. Bake at 350 degrees for 1 hr. & 10 min. or until done.

Caramel Icing:

MIx 2 c sugar, milk & egg & bring to a boil. Brown 1/2 c sugar in
skillet, then add it to egg mixture while boiling. Boil until cool,
then add a little butter & vanilla. Cool & spread over cake. From:
