Ingredients & Directions


2 c Low-fat cottage cheese
1 tb Orange juice
3 Eggs
2/3 c Sugar
2 tb All-purpose flour
1 tb Orange peel, grated
1 tb Grand Marnier (or 1 tsp
-orange extract)
1/2 c All-fruit orange marmalade

The following recipes are reprinted from the Cinnamon Hearts Newsletter
(Apr 96).

1. In blender container, beat cottage cheese on high speed for one minute.
Add eggs, sugar, flour, orange peel, orange juice, and orange extract or
liqeuer. Blend well.

2. Pour into 9-inch deep-dish pie plate which has been sprayed with
vegetable coating. Bake for 50 minutes or until a knife inserted near the
center comes out clean.

3. Cool and refrigerate overnight. Serve chilled the next morning. Garnish
with 1 tbsp of all-fruit orange marmalade per serving, if desired.
