Ingredients For Green Chile Cheese Corn Muffins

  • 1 cup yellow cornmeal
  • 1 cup all-purpose flour
  • 3/4 cup milk
  • 1/4 cup olive oil
  • 2 1/2 teaspoons baking powder
  • 5 tablespoons sugar
  • 1/2 teaspoon oregano
  • 2 1/2 tablespoons green chiles (Jalapeno), chopped
  • 1/2 teaspoon salt
  • 1 large egg beaten
  • 2 tablespoon butter softened
  • 1/3 cup cheddar shredded

How To Make Green Chile Cheese Corn Muffins?

  1. In a bowl combine the yellow cornmeal, all purpose flour,  baking powder, salt, oregano, and sugar, and mix to combine with a whisk.
  2. Add the milk, beaten egg, and olive oil to the flour mixture and mix them together. Then add the green chile peppers and fold it into the batter.
  3. Evenly divide the batter into 12 tin muffin pan lined with paper muffin cups.
  4. Bake in a preheated oven at 380 degrees for 18-20 minutes or until golden.
  5. Remove from the oven and allow the green chili muffins to cool in the muffin pan for 5 minutes, then transfer to a cooling rack.
