Ingredients & Directions


1 c Milk
1 c Plus
1 -(up to)
2 ts Sugar; divided
1/2 c Biscuit mix (eg Bisquick)
4 Eggs
1/4 c Butter or margarine; diced
3/4 c Lemon juice
1 tb Grated lemon peel

Heat oven to 350 degrees F. Lightly grease a 10-inch pie plate. Beat
milk, 1 cup sugar, biscuit mix, eggs and butter in blender or food
processor until combined. Add lemon juice and peel. Blend 2-3 minutes, or
blend with hand beater. Pour into pie plate. Bake until golden brown and
knife inserted in center comes out clean, 40 to 50 minutes. Sprinkle
remaining sugar over the top. Place under broiler until lightly browned.
Cool and serve with whipped topping, if desired. Refrigerate any remaining
pie. ENJOY! Makes 8 servings.
