Ingredients & Directions


1 c Granulated sugar
3/4 c Light brown sugar; packed
8 oz Nonfat cream cheese;
-softened
1 tb Lemon rind; grated
1 tb Orange rind; grated
2 ts Vanilla
4 Eggs
3 c All-purpose flour
1/2 c Cornstarch
1 ts Salt
1 c Nonfat sour cream
1 c Mixed dried fruit; coarsely
-chopped
Dried cranberries
Dried cherries
Dried blueberries
CITRUS GLAZE
1 c Powdered sugar
Orange juice

Citrus Glaze: Combine sugar and enough orange juice to make a glaze
consistency. Yield: 1/2 cup.

Cake: Beat sugars, cream cheese, citrus rinds, and vanilla until smooth in
large bowl; beat in eggs. Mix in combined flour, cornstarch, baking soda,
and salt alternately sour cream. Mix in fruit.

Pour batter into greased 12 cup fluted tube pan. Bake at 350 until
toothpick inserted in center comes out clean, about 60 minutes. Cool in pan
on rack 10 minutes; remove from pan and cool. Drizzle with glaze.
