Ingredients For Old Fashioned Carrot Cookies

  • 2 cups old-fashioned or quick-cooking rolled oats, uncooked
  • 2 cups sifted all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup butter or margarine
  • 1 cup firmly packed brown sugar
  • 1/2 cup granulated sugar
  • 2 eggs, well beaten
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1 cup coarsely shredded carrots
  • 3/4 cup apples (diced small)
  • 3/4 cup chopped walnuts (optional)

How To Make Old Fashioned Carrot Cookies?

  1. Preheat the oven to 350 degree F, and line 2 baking sheets with parchment paper.
  2. In a large mixing bowl with an electric mixer, beat butter, brown sugar, and granulated sugar until well mixed.
  3. Add the eggs and mix well.
  4. Sift together the flour, salt, cinnamon, nutmeg, baking powder, and baking soda, into a bowl then add to the butter mixture and mix well.
  5. Add in the oats, apple, and walnuts and mix until combined.
  6. Drop the carrot cookie dough by tablespoonsful onto lined baking sheets and slightly flatten the tops.
  7. Place the baking tray into the oven and bake for 20- 25 or until light golden brown.
  8. Remove the baking tray from the oven and transfer the carrot cookies to a cooling wire rack.
