- 4 cups all purpose flour
- 1 cup shortening
- 2 large eggs
- 2 cups granulated sugar
- 2 cups pumpkin
- 2 teaspoons cinnamon
- 2 teaspoons baking powder
- 1 teaspoon salt
- 2 teaspoons vanilla extract
- 12 ounces chocolate chips
- 1/2 cup peanuts (chopped) optional

- Preheat the oven to 350 degrees F, and line two baking cookie trays with parchment paper.
- Combine the eggs, sugar, pumpkin puree, and shortening and mix until creamy.
- Add the dry ingredients into a bowl and mix them together, then add the dry mixture to the creamy mixture and stir together. Add the chocolate chips and peanuts (optional), and mix together to combine.
- Using a tablespoon, drop dollops of cookie dough onto a baking sheet separating them apart about 3 inches.
