2/3 c Oil
2 ts Vanilla
1 ts Grated lemon rind
3/4 c Sugar
2 c Flour
2 ts Baking powder
1/2 ts Salt
Beat eggs with fork until well blended. Stir in oil, vanilla and lemon rind
Blend in sugar until mixture thickens. Mix flour, baking powder and salt
and stir into oil mixture. Drop by teaspoon 2″ apart on ungreased cookie
sheet. Flatten with greased glass dipped in sugar. bake 400 degrees for
8-10 min or until delicately brown. Enjoy!
