2 1/2 c All-purpose flour 1 c Butter – softened
2 c Uncooked oatmeal 1 c Granulated sugar
1 ts Baking soda 1 c Packed brown sugar
1/4 ts Ground nutmeg 2 ea Eggs
1 lg Unpeeled orange, cut into 1 ts Vanilla extract
Chunks 1 c Coarsely chopped walnuts
1 c Raisins

In a medium bowl, stir or whisk together flour, oatmeal, soda and
nutmeg. In food processor or blender, combine orange chunks and
raisins; process until finely chopped to yield about 1 1/2 cups.
In a large bowl, cream together butter and sugars. Add eggs and
vanilla; beat until well blended. Stir in orange-raisin mixture.
Gradually stir in flour mixture and nuts. Cover and refrigerate an
hour or longer until well chilled. Shape dough into balls the size of
a walnut (dough is slightly sticky), and place about 2″ apart on
ungreased cookie sheets. Flatten each slightly. Bake at 350 degrees
for 12 to 14 minutes, until lightly brown around edges. With spatula,
remove from cookie sheet and cool on wire racks. From Deniese
