1 cn (8 oz.) unsweetened crushed 3 tb Margarine, melted
-pineapple, undrained 1 Egg, beaten
1 1/2 c All-purpose flour 1/2 ts Vanilla extract
1/2 c Sugar Baking spray with flour
2 ts Baking powder 1/4 c Dark brown sugar, firmly
1/4 ts Salt -packed
1/4 c Skim milk

Drain pineapple, reserving 1/4 cup juice. Set both aside.

Combine flour and next 3 ingredients in a large bowl, and stir well;
make a well in the center of mixture. combine reserved pineapple
juice, milk, and next 3 ingredients in a bowl; add to dry
ingredients. Stir just till dry ingredients are moistened.

Spoon batter into a 9″ square baking pan that has been coated with
baking spray. Top with pineapple; sprinkle with brown sugar. Bake at
350 degrees for 31 minutes or untila wooden pick inserted in center
comes out clean. Cool 10 minutes in pan on a wire rack. Yield: 9
servings (about 197 calories per 3″ square.
