Portuguese Biscoitos Recipe (Biscuit Cookies)

What a treat I have for you! Classic Portuguese biscoitos recipe (biscuit cookies) These Portuguese biscoitos are a traditional biscuit cookies from Portugal. INGREDIENTS NEEDED FOR PORTUGUESE BISCOITOS):

  • 300 grams all purpose flour (2 1/2 cups)
  • 113 grams unsalted butter room temperature ( stick)
  • 150 grams sugar (3/4 cup sugar)
  • 150 grams eggs ( 3 large eggs)
  • 45 grams water or milk ( 3 tablespoons)
  • 1 teaspoon baking powder
  • 1/2 teaspoon lemon zest (2 grams)
  • 1 tablespoon lemon juice
  • pinch of salt

INSTRUCTIONS TO MAKE PORTUGUESE BISCUITS:

  1. Preheat oven to 175°C (350°F).
  2. Prepare two baking sheets with parchment paper.
  3. In a bowl, add the flour, salt and baking powder and mix together using a whisk or spoon.
  4. Cream the butter and the sugar either with a mixing machine or hand mixer until the butter mixture is smooth and light.
  5. Add to the butter mixture, the eggs, vanilla extract, lemon zest and juice, and water or milk and mix until well combined.
  6. Add the flour mixture and mix until the dough comes together. If the dough is dry, and a bit more water or milk.
  7. Place the cookie dough onto a lightly floured working surface.
  8. Use an ice cream scoop and scoop pieces of cookie dough about the size of large gum balls.
  9. Shape the biscoitos by rolling out each piece into a long strip about 4-5 inches in length and 1/2 inch thick, and connect both ends together resembling a ring.
  10. Place biscuits onto baking pan and keep them about 1/2 inch apart.
  11. Repeat until all the biscuit cookie dough is used up.
  12. Baking one tray at a time, place the cookie tray into the oven and bake for 16-18 minutes or until light golden brown.
  13. Once baked, take out from the oven and let the biscuits cool down for a few minutes before transferring them to a plate or wire rack.
  14. Repeat with the second tray.
  15. Keep biscuits stored in an airtight container, they will keep well for about 2-3 weeks.
