Portuguese Rice Pudding Recipe

This recipe is a traditional Portuguese Rice Pudding also referred to as “Arroz doce” from the Azores. It’s a light, creamy sweet rice dessert pudding with a hint of lemon flavor that is gluten free. This traditional Azorean Portuguese rice pudding recipe is super quick to prepare and is traditionally served during parties and holidays.

Rice Pudding Without Egg

Traditionally Portuguese rice pudding is made with the addition of egg yolks but If you prefer your rice pudding without egg all you have to do is omit it from the recipe, it will still taste amazing.

Ingredients For Traditional Portuguese Rice Pudding:

  • 1 large cup short grain rice (210 grams)
  • 1/4 teaspoon salt (2 grams)
  • 11/2 cups water (360 grams)
  • 2 1/2 cups milk (600 grams)
  • 3/4 cup granulated sugar (175 grams)
  • 1 lemon rind
  • 3 large egg yolks (55 grams), beaten
  • 1 cinnamon stick
  • 2 tablespoons cinnamon powder (15 grams), for topping

Instructions For Portuguese Rice Pudding:

  1. Rinse the rice then place it into a medium size pot with water and salt, then cook on medium-high heat for about 15 minutes.
  2. Once the rice is cooked, reduce the heat to medium-low heat then add the lemon rinds, cinnamon stick, and milk and cook constantly stirring until you notice the milk bubbling.
  3. Add the sugar and stir to combine, continue to cook on medium-low heat stirring until the rice pudding thickens about 8-10 minutes.
  4. Remove some of the rice and mix with the egg yolks to temper the eggs, then add the egg yolks to the rice and stir until they are well incorporated. Continue to cook for about 5 minutes stirring occasionally rice pudding is nice and thick.
  5. Once the rice pudding is cooked, remove the lemon peels and cinnamon stick.
  6. Transfer the rice pudding onto serving plates or bowls and sprinkle with some cinnamon.
  7. Serve and enjoy!
