FILLING
1 c Sugar
2 tb Flour
1 c Hot water
1 c Raisins
1 c Chopped nuts

Okay, I’m delurking for this to share a filled cookie recipe from a
cookbook that my Mom gave to each of her children last Christmas. She and
Dad were married in 1949 and have six children. She’s a wonderful cook, and
the book is priceless, as it is filled with recipes from friends and family
members who are no longer with us, and contains her personal notes. She
made it by entering some of her recipes on computer and then putting the
printed recipes into a three-ring binder with category dividers. It’s one
of those projects that she started and almost didn’t give because she
doesn’t view it as “finished” since, of course, it doesn’t contain all of
her favortie recipes. She finally realized that she could give out what she
had completed, and it would be a wonderful gift that could be supplemented
over the years. For all of you Moms and/or long-time good cooks, I can
testify that such a personal cookbook is a wonderful and much appreciated
gift. Here’s a cookie recipe in the spirit of Mary’s challenge (the notes
are my Mom’s). Thanks to all of you who make this list such a treat.

Mix sugar and flour, pour hot water over this — add raisins and nuts and
cool til thick. Chill this then use any sugar cookie recipe for cookies.

Cut out cookie — spoon a spoon of raisin mix in middle of cookie and top
with another cookie. Crimp edges together — place on cookie sheet, prick
top in one place to let out steam and bake — maybe 375 degrees til
browned.

(My Mom’s notes — This is an old recipe from my Aunt Lorene (my Dad’s
sister). She used to make this at Christmas and keep in the rose cookie jar
that I now have, and send some to me.)
