8 Eggs
1 1/2 c Sufted sygar
1 1/2 Tso grated lemon rind
3 Tlb lemon juice
1 Full cup potato starch;
-(sifted)
1 ds Salt desired)

{ don’t have a recipe for bread, but I have a wonderful recipe for a sponge
cake made from potato starch. This recipe is on the box of Manischewitz
potato starch:
Separate the 8 eggs. Using an electric mixer, beat the 8 egg yolks for 2
minutes athigh speed. Add the lemon juice, sugar, and lemon rind and mix
for 2 minutes at medium speed. Gradually add the sifted potato starch and
continue mixing at medium speed for an additional 2 minutes. Beat the egg
whites until stiff and fold the beaten egg whites gently but thoroughly
with the yolk-sugar mixture. Place in an ungreased 10 inch tube pan and
bake at 350 degrees F for 55 to 65 minutes or until the cake springs back
when firmly touched with the fingers. Invert pan and cool thoroughly before
removing from pan.

Note: I add the juice and rind of an orange to the egg yolk mixture and
also 1/4 cup of ground walnuts to the yolk mixture. Invert pan on a ketchup
bottle to cool and run a sharp knife around the edges and center before
removing,
