Alfajores recipe from our baker in Argentina. Alfajores is a type of sandwich cookie native to the Argentinians. Although you can find this delicious sweet cookie filled with dulce de leche and wrapped around with sweet coconut through South America it is a staple dessert in Argentina.
- 2 cup (500 grams) unbleached all-purpose flour
- 2 teaspoon (8 grams) baking powder
- 1 cup (250 grams) salted butter at room temperature
- 1 cup (250 grams) granulated sugar
- 2 egg yolk
- 1 teaspoon (5 grams) natural vanilla extract
- 2 cup (500 ml) dulce de leche
- 1 cup (250 grams) sweet desiccated coconut
PREPARATION
- In a medium size bowl, shift the flour and baking powder and put aside
- In a separate bowl, add the butter and cream it with the sugar ith a mixer using the paddle attachment
- Slowly add the vanilla extract and egg yolk and mix till mixture is smooth and shiney
- add the flour and baking powder mixture and continue mixing until the cookie dough comes together
- cover and refrigerate for 1 hour
- Preheat your oven to 170°C (350°F)
- cover your baking tray with parchment paper.
- Flour the working area
- place the chilled dough onto the floured table and roll out to 3-4mm thickness and cut pieces with a 3 inch round cookie cutter cookie cutter
- the Alfajores cookie dough will be delicate so transfer too baking sheet with scraper
- place into the oven and bake for approximately 10-12 minutes
- once cookie have baked let them cool on a wire rack
- spread about 20 grams of Dulce de leche filling onto one side of the cookie and sandwich them
- spread a little bit of dulce de leche along the side of the cookies and roll with coconut
