Ingredients & Directions


3/4 c Wheat flour
3/4 c Unbleached flour
3/4 c Wheat bran*; unprocessed
2 tb Granulated sugar
1/2 tb Baking powder
1/2 tb Baking soda
2 ts Cinnamon
1/4 ts Salt
2 Egg whites; whipped
1/4 c Applesauce; at room temperat
1 1/2 c Buttermilk*; at room tempera
1 ts Vanilla

Prepare skillet with cooking spray and heat on medium until hot. In a
mixing bowl, combine flour, wheat bran, baking powder, baking soda,
cinnamon, and salt. In another mixing bowl, combine egg whites,
applesauce, buttermilk, and vanilla. Mix wet ingredients with dry
ingredients just until moistened. Ladle in the batter, using 2 or more
tablespoons per cake. Cook for 2 minutes, then flip carefully and
cook for 2 minutes more. Repeat with remaining batter.
