Ingredients & Directions


1/4 c Applesauce
1/4 c Yogurt or lowfat sourcream
1 Egg
1 c Molasses
2 1/2 c Flour
1 1/2 ts Baking soda
1/2 ts Salt
1 ts Cinnamon
1 ts Ginger
1 ts Nutmeg
1 ts Ground cloves
1 c Hot water

-LEMON GLAZE-
1/2 Box powdered sugar
2 Lemons

Blend applesauce and yogurt together. Add sugar and mix thoroughly. Beat in
egg and molasses. Sift flour together with soda, salt, and spices. Add to
molasses mixture alternately with hot water, beginning and ending with
flour. Pour into a greased 9×9 pan and bake at 350 for 45 minutes or until
a toothpick inserted in the middle comes out clean. After removing from
oven, pierce top with the tines of a fork and glaze (recipe follows). I
think this tastes best warm.

Lemon Glaze: In a small bowl, empty 1/2 box powdered sugar. Squeeze juice
of two lemons into the sugar and mix to dissolve. Glaze warm gingerbread.
