Ingredients For Old Fashioned Carrot Cookies
- 2 cups old-fashioned or quick-cooking rolled oats, uncooked
- 2 cups sifted all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup butter or margarine
- 1 cup firmly packed brown sugar
- 1/2 cup granulated sugar
- 2 eggs, well beaten
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1 cup coarsely shredded carrots
- 3/4 cup apples (diced small)
- 3/4 cup chopped walnuts (optional)
How To Make Old Fashioned Carrot Cookies?
- Preheat the oven to 350 degree F, and line 2 baking sheets with parchment paper.
- In a large mixing bowl with an electric mixer, beat butter, brown sugar, and granulated sugar until well mixed.
- Add the eggs and mix well.
- Sift together the flour, salt, cinnamon, nutmeg, baking powder, and baking soda, into a bowl then add to the butter mixture and mix well.
- Add in the oats, apple, and walnuts and mix until combined.
- Drop the carrot cookie dough by tablespoonsful onto lined baking sheets and slightly flatten the tops.
- Place the baking tray into the oven and bake for 20- 25 or until light golden brown.
- Remove the baking tray from the oven and transfer the carrot cookies to a cooling wire rack.
