  • 3 1/2 cups all purpose flour
  • 1 cup canola oil
  • 2 cups granulated sugar
  • 2 cups fresh grated zucchini
  • 3 large eggs
  • 1 teaspoon salt
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon freshly grated nutmeg
  • 1 teaspoon ground cinnamon
  • 2 1/2 cups raisins

How To Make Old Fashioned Zucchini Bread?

  1. Preheat the oven to 350°F (175°C), and grease and flour two 8X5 inch loaf pans.
  2. In a large bowl mix together the oil, sugar, and salt.
  3. Add the grated zucchini, followed by the eggs.
  4. In a separate bowl, sift the flour, cinnamon, nutmeg, baking soda, and baking powder, then add the flour mixture to the zucchini mixture and mix together until a thick batter developed. Add the raisins and mix to combine.
  5. Divide the zucchini batter in half and pour it into the greased loaf pans.
  6. Place into the oven and bake for 55-60 minutes or until the toothpick comes out clean.
  7. Once baked remove the zucchini bread from the oven, then turn it over to release it from the baking pan.
  8. Cool the zucchini loaves with the crown facing upward on a cooling rack for about 30 minutes.
