Ingredients & Directions


4 tb Sweet butter
12 oz Semisweet chocolate chips
1/4 c Dark or amber rum
2 ts Instant coffee powder
3/4 c Packed brown sugar
3 Eggs
1/4 c Flour
1 c Coarsely chopped walnuts
1/2 c Chopped walnuts for topping

Preheat oven to 350x F. Grease a 9″ glass pie plate. In a 2-quart glass
bowl, combine 4 Tblsp. sweet butter and 12 oz. semisweet chocolate chips.
Heat in a microwave oven on high 1 1/14 to 1 3/4 minutes, until mixture is
melted and smooth when stirred. Stir in 1/4 c. dark or amber rum, 2 tsp.
instant coffee powder, 3/4 c. packed brown sugar, 3 eggs and 1/4 c. flour.
Mix until smooth and well blended. Stir in 1 c. of coarsely chopped
walnuts. Turn batter into prepared pie plate. Sprinkle another 1/2 c. of
chopped walnuts on top. Bake for 25-30 minutes or until puffed. Pie should
still be moist inside. Do not overbake. Let pie cool to room temperature
before serving, topped with whipped cream. Makes 8 servings.
