- 250 grams tapioca flour (2 cups)
- 1 teaspoon garlic powder
- 1/4 cup freshly grated mozzarella cheese
- 1/2 cup fresh grated Parmesan cheese
- 100 grams eggs (2 eggs beaten)
- 115 grams unsalted butter (1/2 cup)
- 78 grams water (1/3 cup)
- 78 grams milk (1/3 cup)
- 4 grams salt (3/4 teaspoon)
- Preheat your oven to 375 degrees Fahrenheit (190 degrees Celsius).
- In a cooking pot, add the butter, salt, water, milk and cook till it comes to a boil then remove from heat.
- Add in the tapioca flour and garlic powder and mix using a spatula until well combined
- Stir in both cheeses followed by the eggs and mix until well combined, the mixture will be viscous
- Using a piping bag or small ice cream scoop, deposit small drops of the batter onto lined baking pan.
- Place baking tray into preheated oven and bake for 18-20 minutes or until nicely puffed and golden
