Ingredients & Directions


4 tb Butter
1/2 c All-purpose flour
1/2 c All whole wheat flour
1 1/2 ts Baking powder
1/2 ts Sugar
1/4 ts Salt
1 Egg
1 c Milk
Applesauce (Optional)
Honey (Optional)

Utensils Required: Large frying pan, pot holder, measuring cups, measuring
spoons, large mixing bowl, wooden spoon, small mixing bowl, whisk, spatula,
ovenproof plate, oven mitts.
Yield: 20 pancakes Prep: 20 minutes

Heat 2 tb of the butter in the pan over medium heat until it melts. Remove
the pan from the heat and set aside.

Place both flours, baking powder, sugar, and salt in a large mixing bowl
and stir together with a wooden spoon.

Break the egg into a small mixing bowl. Add the melted butter and the milk
and whisk together very well.

Pour the egg mixture into the flour mixture and whisk until the batter is
quite smooth and has almost no lumps.

Preheat the oven to 200F.

Melt a quarter of the remaining butter in the frying pan over medium heat.
Holding the handle of the pan with a pot holder, tilt the pan so that the
melted butter coats the bottom evenly.

To make a Teddy Bear pancake, spoon 1 tb of the batter into the pan for the
body and then add 1 tsp above the body for the head. With another tsp of
the batter, make the ears, hands and feet. Make as many pancakes as will
fit in the pan without touching.

Cook the pancakes over medium heat until you can see bubbles on the top,
about 2 minutes; then lift up one edge of a pancake with the spatula and
look to see if the bottom is golden brown. If it is brown, flip it over and
cook until the second side is golden brown, about 2 more minutes.

Remove the cooked pancakes from the pan, place them on the oven proof
plate, and set the plate in the oven to keep the pancakes warm until you
are ready to eat.

Melt more butter in the pan as needed and make more pancakes until the
batter is gone.

When you are ready to serve, put on the oven mitts and remove the plate
from the oven.

These pancakes are delicious served with applesauce that has been sweetened
with a touch of honey.
