Ingredients & Directions


2 1/2 c Whole wheat pastry flour
1/2 c Brown sugar
1 1/2 ts Baking soda; sifted
1 ts Baking powder
1 ts Cinnamon
1/2 ts Ground cardamom
1/4 ts Salt
1/2 ts Ground cloves
1/2 c Soy milk
1/2 c Prune puree; *
2 tb Canola oil; optional
1 c Soy yogurt

Preheat oven to 350. Prepare 9x5x3 ” loaf pan with spray. Stir
together dry ingredients in large bowl. Combine wet ingredients in
separate bowl. Add wet to dry ingredients and stir until just mixed.
Spoon batter into loaf pan and bake for about 1 hour.

NOTES : * use a commercial prune puree or make your own by simmering
1 cup of pitted prunes in 1/2 cup of orange juice on very low heat
for 10 minutes, stirring occasionally. Puree in blender. (This
makes more than recipe calles for so refrigerate leftovers for later
use.)
