  • 150 ml of double cream.
  • 400 grams of dark bitter chocolate, broken into small pieces.
  • 4 tablespoons of unsalted butter, softened.
  • Unsweetened cocoa powder.


How To Make Bitter Chocolate Truffles?

  1. In a saucepan, boil the double cream until reduced to 2 tablespoons.
  2. Remove from heat and stir in the chocolate pieces until melted.
  3. Add the butter and stir gently, then pour onto a large flat plate.
  4. Refrigerate for 45 minutes until chilled and set.
  5. Using a teaspoon, scrape across the chocolate to form a rough truffle shape in large curls (not balls).
  6. Roll them in dry cocoa powder.
  7. Refrigerate for at least 30 minutes before serving.
